Here's something most visitors don't know...

While mackerel has long been a springtime favourite, recent sustainability concerns mean food-conscious travellers should consider alternatives.According to the Marine Conservation Society, north-east Atlantic mackerel stocks are nearing a "breaking point" due to overfishing. The Good Fish Guide has downgraded Mackerel caught by midwater trawl nets from a 3 to a 4 rating, meaning restaurants are recommended not to sell it.

"It's deeply concerning to see a source of seafood that was once a sustainable choice in such decline," says Alice Moore, manager of the Good Fish Guide. "Mackerel is under immense pressure from fishing activities across multiple nations."

The good news? Yorkshire's coast offers plenty of sustainable alternatives. Herring from the North Sea and eastern Channel is recommended as a more sustainable choice. Local chefs are also featuring Cornish sardines and locally caught shellfish on their spring menus.

The undisputed champion of spring foraging is wild garlic (also known as ramsons). These broad, vibrant green leaves are now emerging in damp woodland areas throughout Yorkshire, filling the air with their distinctive aroma.

CHEF'S RECIPE: WILD GARLIC BUTTER

Want to try making something with wild garlic at home? Here's a simple recipe for wild garlic butter:

Ingredients:

250g unsalted butter, at room temperature
A generous handful of wild garlic leaves, thoroughly washed
A pinch of sea salt

Method:

Finely chop the wild garlic leaves
Mix with the softened butter and sea salt
Roll into a log using cling film
Refrigerate until firm
Slice and use to top grilled meats, fish, or vegetables

This butter will keep in the refrigerator for up to two weeks, or can be frozen for later use.

But what exactly might you see on your North Sea wildlife expedition?

Spring and Summer: England's Largest Seabird City

Between April and August, something truly magical happens along our coastline.

The towering 112 metre chalk cliffs around Flamborough and Filey transform into England's largest seabird city. More than 400,000 birds bring these dramatic cliffs alive, creating a sensory experience you'll never forget.

The stars of this spectacular show include:

Puffins : These charismatic birds with their distinctive colourful beaks are often called "sea parrots" or "clowns of the sea." Visit between April and mid-July to watch them nesting on the cliff edges. Sadly, puffins are now on the Red List of Birds of Conservation Concern, making every sighting even more precious.

Gannets : By far the largest seabirds in the area, gannets are stunning white birds with black wing tips and creamy yellow heads. With an impressive wingspan of 2 metres, watching them soar along the cliffs is breathtaking. Bempton Cliffs hosts the largest mainland gannetry in England.

Guillemots and Razorbills : These smart-looking birds in their contrasting black and white plumage crowd onto narrow cliff ledges. Though they're inefficient flyers, they're excellent swimmers, diving deep under the sea surface in search of fish.

Kittiwakes : These medium-sized gulls with yellow beaks, white heads and grey backs create a constant chorus with their distinctive calls that gave them their name.

The Magnificent Seals of Flamborough Head

One of the most magical wildlife experiences near Orchard Lodge is encountering the seal colonies at Flamborough Head.

Both common and grey seal colonies are thriving beneath the magnificent chalk cliffs along this stretch of coastline. Gristhorpe Cliff, near Flamborough Head, is particularly renowned as one of the best places to see seals hauled out on the rocks.

You've a very good chance of seeing common seal pups in June and July, while grey seals come ashore to pup in November. These charismatic marine mammals can often be spotted bobbing in the waves or basking on rocks at low tide.

For the best and safest seal watching experience, we recommend joining one of the boat trips that operate from nearby harbours. These trips allow you to observe these magnificent creatures in their natural habitat without disturbing them. If you do spot seals on beaches during your coastal walks, remember to keep a respectful distance and keep dogs on leads.

Autumn is perhaps the best time to see grey seals around Filey Brigg and Flamborough Head, while common seal pups are more likely to be spotted in June and July. Grey seals come ashore to pup in November.

Winter Wonders: Coastal Birds and Migrating Visitors

Even in winter, the wildlife display continues. Filey Bay becomes a great place to look for:

It's early morning and I'm collecting eggs from our chickens in the orchard. These aren't just any eggs – they're laid by hens that scratch about happily in the fresh Yorkshire air, producing yolks so golden they look like little suns on your breakfast plate.

Meanwhile, Chef Michael is chatting with our delivery driver from Trotters, our local farm butcher . They're discussing the perfect cut for tonight's special.

The meat has travelled just a few miles rather than hundreds, meaning it's fresher and has a much smaller carbon footprint.

In our garden, depending on the season, we might be picking apples for our homemade juice, or berries for our jams.

And just down the road, Bayview Bees are tending to the hives that produce the honey we serve at breakfast.

This isn't just food – it's a community effort.

Most people play it safe with career changes...

We jumped from classrooms to fine dining overnight.

Ever wondered what happens when two educators decide to swap textbooks for recipe books? Well, that's exactly what happened with us!

Hi there! Andrew here, alongside my wife Lucinda. We're the proud owners of Orchard Lodge Wolds Restaurant and Accommodation, and we thought it was high time we shared a bit about our journey with you.

Our Unexpected Journey

Life has a funny way of surprising you, doesn't it?

After years of working in education and traveling around the UK, Lucinda and I decided it was time for a change. We wanted something we could build together – a place to put down roots.

Would you believe we looked all over the country (and even overseas!) for the right business?

Then, during what was meant to be a quick weekend trip to Scarborough to visit friends, everything changed.

There's something magical about Yorkshire that just pulls you in. Having been married in Scarborough, coming back felt like returning home.

Two weeks later – yes, just TWO weeks! – we found ourselves the proud owners of Orchard Lodge.

Talk about a career change!

What Makes Orchard Lodge Special

So what makes Orchard Lodge different from other places you might stay or dine?

For starters, we're nestled in the peaceful village of Flixton, right on the northern edge of the Yorkshire Wolds. Just four miles from the stunning Yorkshire coast and less than three miles from Ganton Golf Club (a Ryder Cup championship course, no less!), we've got location sorted.

But it's not just about where we are – it's about who we are.

Here's the thing...

When we took over Orchard Lodge, we wanted to create something truly special. A place where guests feel like friends, where the food tells the story of Yorkshire, and where every stay leaves you feeling refreshed and a little bit spoiled.

Our Award-Winning Restaurant "Wolds"

Let me tell you about our pride and joy – Wolds Restaurant.

We were over the moon when Wolds received a Blue Ribbon in the Good Food Awards in both 2023 and 2024.

And then in December 2023...

We were awarded two AA Rosettes – making us the only restaurant in the Scarborough, Filey, and Bridlington area with this recognition!

The real secret is our incredible Executive Chef, Michael Burgoyne. Michael trained in some of London's top Michelin-starred restaurants and even opened a Michelin-guided restaurant in Cambridge. His passion for local, seasonal ingredients shines through in every dish.

"Every bite is a celebration of fresh, local ingredients," Michael often says, and he means it.

Nobody mentions this, but we actually raise our own chickens in the orchard for organic eggs, source meats from Trotters (a local farm butcher), make jams from fruit grown in our gardens, and even get our honey from Bayview Bees right here in Flixton village.

From Classroom to Customer Service

People often ask us how we went from education to hospitality.

The truth is, there are more similarities than you might think!

Both require patience, attention to detail, and a genuine desire to make people happy.

The main difference? Instead of marking papers late into the night, we're now ensuring our guests have the perfect evening meal or a comfortable night's sleep.

And honestly? We wouldn't change a thing.
